Savoury bell pepper and zucchi muffins

100g Oat Flour | 8g Baking Powder |
20g Nutriway All Plant Protein Powder | 1 Teaspoon of Salt |
1 Egg | Mixed Seeds |
90g Veg Milk | Half a Zucchini Cut into Cubes |
50g Yogurt | 1/3 Red Bell Pepper Cut into Cubes |
25g Extra Virgin olive Oil | Turmeric or Sweet/Smoked Paprika (optional) |
Thyme (optional) |
INSTRUCTION
Sift the flour and yeast into a bowl, add protein powder, salt and mix. In another bowl, pour the veg drink, yogurt, extra virgin olive oil, and mix well with a whisk. You can add turmeric or sweet/smoked paprika and thyme to taste to colour and flavour your muffins.
Combine the liquid ingredients with the solid ones and mix until you obtain a smooth mixture. Finally add the zucchini and red bell pepper cubes. Divide the mixture obtained into the muffin moulds (fill them up to 2/3). Place them in the preheated oven at 180 degrees in static mode. Cook for approximately 30 minutes.
